Combining Day to Day blog with this one

I am going to combine my 2 blogs into this one... so here is a post from Thursday on my other blog:
What a crazy year it has been... I try to get into a routine and fail, I try to get better at certain aspects in life and fail, sometimes it feels like all that I do is fail, but I know that God still loves me and that is the important thing... One thing that I have been succeeding at doing is reading a devotional every morning, it has been so refreshing for my soul! This week has had some other great things happen in it... Things that are more day-to-day and having to do with being a mom and housewife (still not sure how I feel about that title, but hey)... This week I have tried 3 new recipes, all of which were successes! This is great news since I tried a new recipe a couple months ago and it was ok, then when I tried to re-make it just last week it was a huge failure, followed by 2 other meals that I make all the time failing horribly... so what did I make this week? Monday I made Lasagna Roll-ups... It is the same idea as lasagna, but instead of layering everything you roll each noodle up individually so that each noodle is a serving... Here is what I did:

Lasagna Roll Up (got the main idea from this site: All Recipes.com)

Brown 1 pound of ground beef (I seasoned mine with oregano and parsley) Boil lasagna noodles until Al Dente (or my version of al dente is just before they are soft enough to eay hehe)

Mix together Ricotta Cheese and Shredded Mozzarella Cheese in a bowl Once everything is cooked and mixed together, lay noodles on a piece of wax paper, put a TBS of sauce and spread over noodle, then crumble about 2TBS of beef across the sauce, drop/spread 2TBS of cheese mixture over that... Roll them up like a jelly roll... Once they are all done (I made the entire box of noodles) I put some sauce in the bottom of a baking dish and placed a few lasagna rolls in the dish, covered them with more sauce and baked at 375 for 30-35 mins... The rest of the rolls I put in aluminum foil and a storage bag to put in the freezer for an easy freezer meal later

My family loved it!

Tuesday I made this Vegetable Tian meal... I have no idea what that is and had to alter the recipe that I found, but again it was a huge success Here is what I did:

Vegetable Tian (adapted from Budget Bytes)

I had browned too much beef on Monday so I had about 1 pound of ground beef seasoned with parsley and oregano that I layered at the bottom of a baking dish, next I sliced zucchini, cucumber (they suggest squash and I would have if I had it, but the cucumber worked well), tomato and potato and stuck them vertically on top of the meat alternating the veggies (don't layer them, you want them standing on the "edges")... sprinkle some salt, pepper and oregano (or was it parsley or something else?) on top of all the veggies, cover with foil and bake at 400 for 30 mins, remove foil and add a generous amount of shredded cheese (they said Italian blend, I used a colby jack blend) and bake uncovered for another 15 min

this was probably Greg's favorite, not sure that O cared for it, or he may have not been hungry and I thought it was missing something so I'll keep experimenting...

Finally Wednesday I made up my own Noodles and Beef Tips

Noodles and Beef tips (basically my own recipe, but I saw a recipe somewhere just can't remember where that used a packet of gravy and a packet of Au Jus and I made up the rest from there...)

I took Country Style Beef Ribs and put them in a crock pot, sprinkled some cumin and red pepper on top, added 1 packet of brown gravy mix, 1 packet of Au Jus mix and 1 cup of water... Cooked on high for about 1.5 hour then turned to low for 3 or 4 hours... towards the end I made egg noodles as normal, while they were cooking I took out the beef and cut into smaller pieces and put back in the crock pot for the remaining time and let them marinate a little more... then pour the beef and gravy on the noodles and have some deliciousness!

Greg and O loved, but I thought I put too much cumin in (which it did come out a little fast for my preference) otherwise complete success!

Now tonight is going to be a simple grilled chicken on a salad of romaine lettuce, cucumber, zucchini and tomato topped with cheese and dressing! yum and simple!



Now for other news... O told me 8 different colors yesterday while he was coloring, he would pick up each crayon and tell me its color... He told me blue, black, brown, green, orange, purple, red, and yellow! Then when showing Daddy, he was being a stinker and not paying attention, but if I would tell him to grab the red crayon he did and did so with all 8 colors again! (had a little problem with purple at first, but got it soon enough) So proud of my little man!
